Located within the historic Gloucester Food Dock, the Roots & Seeds project involved the full commercial fit-out of a previously unused Victorian building, transforming it into a vibrant new restaurant and bar.

The project included the installation of a state-of-the-art contemporary commercial kitchen, along with a complete interior fit-out to create a welcoming, functional, and modern dining space. A key aspect of the project was sensitively integrating the building’s original Victorian features, preserving its heritage while delivering a stylish and efficient commercial environment.
The result is a dynamic venue that balances modern functionality with period character—offering guests a unique dining experience in one of Gloucester’s most exciting new food destinations.
